Spinach Balls
Ingredients:
2 boxes frozen, chopped spinach, thawed and drained well
4 c. Pepperidge Farm Herb Seasoned stuffing
2 c. minced white onion
6T flax seed meal
3/4 c. water
3/4 c. Earth Balance Buttery Sticks ( 1 1/2 sticks), melted
1/2 c. nutritional yeast flakes
2 t. granulated garlic
1 t. salt
1/2 t. black pepper
Directions:
Preheat oven to 350 degrees and line two cookie sheets with parchment paper.
In a large bowl, whisk flax seed meal with water. Let stand to thicken.
Add melted Earth Balance, spinach, onions, garlic, salt, pepper, and nutritional yeast and mix well.
Add stuffing mix and stir. Add a bit more water if too dry.
Roll into balls, wetting hands if too sticky.
Bake 20 min, until golden. Let stand for 5 min. before removing from sheet. Balls will firm up as they cool.
