Sweet Potato Curry with Greens
Ingredients:
1 small onion, chopped
3-4 cloves of garlic, minced
1/2 jalapeno, chopped finely
1 (1-inch piece) fresh ginger, peeled and grated
1 tbsp curry powder
1.5 tsp garam masala
4 cups vegetable broth
3 cups sweet potatoes (peeled and chopped - about 2)
1.5 cups yellow lentils (toor dal), rinsed
3/4 cup plain yogurt
juice of 1/2 lime
1 bunch swiss chard, center stems removed, chopped
1 tsp salt
black pepper
Directions:
Sauté onion in a large, deep saucepan until soft, adding water 1-2 tbsp at a time to keep from sticking. Add garlic and jalapeno.
Add ginger, curry powder, garam masala and stir to fully combine. Cook for a few minutes, adding water as needed.
Add in broth, sweet potatoes and lentils. Stir to combine, cover and bring to a boil. Reduce heat and cover again, with the lid open a crack - simmer for 20 minutes.
When lentils are tender and liquid has decreased, add in yogurt, lime juice and chard. Cook until chard is just starting to wilt. Add salt and pepper to taste, stir to combine, and serve.
