Sheet Pan Caprese GnocchiÂ
Ingredients:
4 cups cherry tomatos
1 lb gnocchi (fresh or frozen)
3 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
2 cups mozzarella balls
fresh basil leaves
balsamic reduction
Directions:
Preheat oven to 400 degrees. Toss together cherry tomatoes, gnocchi, olive oil, salt, and pepper directly on the prepared baking sheet. Arrange in an even layer.
Roast for 15-20 minutes, or until the gnocchi are plump and tomatoes have burst.
Remove from oven and add the mozzarella balls to the sheet and toss together. Garnish with fresh basil and drizzle with balsamic reduction.
