Sweet Potato Pasta
Ingredients:
1 lg. sweet potato cooked and mashed
1/2 c. nutritional yeast
1 can reduced fat coconut milk
1/2 t. onion powder
1/2 t. garlic powder
1 t. salt
dash pepper
Pasta
Directions:
Combine ingredients in a pan and cook, stirring, about 3 minutes.
Puree in a blender if you don’t want the lumps. Serve with pasta of choice.
For non-vegan option:
When mixing sauce ingredients together, include a generous splash of half/half, and about 2 tbsp of butter. Include white pepper and after blending, mix in mozzarella cheese.
