Kale and White Beans
Kale and White Beans
Ingredients:
10 c. coarsely chopped kale
4 T olive oil
4 cloves garlic
lg. onion, sliced
1t. oregano
2 T brown sugar
1t. thyme
1/2t. salt
2 T balsamic vinegar
1 can navy or other white beans
2 large tomatoes, sliced
Directions:
Saute onion and garlic until browned.
Stir in sugar, oregano, thyme and salt
Add kale and stir to cook down just slightly
Stir in white beans, and cook briefly
Add vinegar and cover the dish with sliced tomatoes.
