Veggie Skillet Phyllo Pie
Ingredients:
2 Tbsp olive oil
3 cups chopped Leek (about 1 large leek)
4 garlic cloves, peeled and chopped
1 cup cubed sweet potato or butternut
4 cups swiss chard, chopped
1/2 salt
1/2 pepper
1 tsp dried thyme
2 eggs
1 c crumbled feta cheese
6 sheets phyllo dough
oil to brush
Directions
Heat the oil in a 10-inch skillet on medium-high heat. Add the chopped leeks and cook for about 2 minutes. Reduce heat to medium and cook for another 5-8 minutes until they begin to caramelize.
Add in garlic, sweet potato, chard, and spices - mix and cook for 5 minutes. Remove from heat and let cool to room temperature.
Mix eggs and feta together in a large bowl - pour the vegetable mixture in and mix everything together.
Clean the pan and brush with olive oil. Layer phyllo dough on (one sheet vertically, next sheet horizontally, brushing with olive oil between each layer).Â
Once phyllo is layered, pour in vegetable mixture. Use your hands to fold up corners of each sheet and brush phyllo again with olive oil
Bake at 350 degrees for about 20 minutes, until phyllo is golden brown.
