Korean Japchae
Ingredients:
10-12 oz. dangmyen (sweet potato noodles)
oil for frying
1 large onion, sliced
1-2 carrots, in matchsticks
15 dried shiitake mushrooms, soaked, trimmed and sliced. Save soaking water!
1/4 c. sweet cooking rice wine
3-4 cloves garlic, minced
1- 1 1/2 t. grated ginger
10 oz. frozen spinach, soaked in mushroom water, then drained.
1 T. white sesame seeds
2 T. toasted sesame oil
1/4 c. tamari
2 T. sugar
Directions:
Boil noodles in water, 4-6 minutes. Drain in cold, running water and Snip to 6" lengths.
In lg. skillet, sautee onion, carrot, and mushrooms in oil until softened.
Add sweetened rice wine, garlic, and ginger; cook 1-2 minutes.
add spinach, sesame seeds, and sesame oil, tamari and sugar. Cook briefly and toss with noodles.
